Look at how they do it when transfering into Home, all the EVs from Let's Go are just reset to 0, IVs are normally converted since they are like the main games. And for the ability, any Pokémon with HA could be just getting randomly one of its NA ability back. There is nothing crazy data wise either, they just don't want to take any risk or do more effort for old games they won't sell anymore anyway.
