Dark Celebi and Jirachi from a 2004-ish set, as well as some shiny Pokemon from I believe the ORAS era come to mind, as well as cards with two weaknesses
Off the top of my head, Wailord ex from the Sandstorm expansion back in 2003, and sometimes the same Pokemon will show up on two different cards with a different type and weakness/resistance breakdown on each
Fighting Infernape are weak to Psychic, Fire Infernape are weak to Water, but it sounds like they're trying to cut down on that because it got needlessly convoluted.
