That's where it falls apart for me. You could say the exact same about Charizard learning Thunderpunch for Blastoise and Venusaur learning Stone Edge for Charizard.

It was almost a perfect trio until that.

ingame you can manage it because the only stat you really need to beat is their speed to hit first or their level so you have more HP/def EVs and a better damage formula than theirs.

Practically speaking Ape beats both thanks to raw speed. The only scenario the other ones get a shot to beat Ape is when overleveled enough to survive, having items, or when ape is ai controlled and makes suboptimal moves.
This typing trio arguably has bad repercussions ingame because the the ability of the starter trio to KO eachother like this makes the rival's advantage of a starter counterpick relatively moot throughout the game.

It's still slanted in favour of Infernape but it's possible for the other starters to win, especially if they grind a few levels.

Yes, but the first few fights would be easier because they're still monotype and Game Freak lately seem fixated on giving the main rival the starter weak to yours, presumably for that reason.
