What’s the best way to slowly get her interested in the series

Listen here, OP. 99% of women don't really care about this franchise. Just introduce your girlfriend to the new games, they are the easiest, normie tier superficial thing ever. Your gf will probably become a "fan" of the series, which is to say, she'll want to cosplay as a character from the series, or pokemon if you're lucky, and when she asks you what you think, you can choose whichever one you'd rather fuck. Get her into the newest game on whatever system she has. Trying to force her into older ones could backfire because someone new to the franchise won't appreciate what makes the older ones good.
Let her play at her own pace and form her own opinions, don't force her or pester her about it except for maybe a check in comment every now and then.
When the next game in the series is announced suggest getting one version each and telling her you can play together and trade and collect. For bonus points if there is a version she is more drawn to let her have it and take the other.
When she talks to you about Pokemon you can have a pretty good one about favorite Pokemon, which game you like ect.

You MAY still be able to get her to cosplay a Pokemon character though, I've ran into lots of people at conventions who don't know the first thing about the character they're going as

Just give her a Pokemon game and don't push her into playing.

If you look like you're having fun, she might want to play it. Stick to the more modern games in the series. I honestly think SwSh is a good starting point since the game is pretty straightforward and most of the early pokemon are cute.

If she takes it on, comment on the game with her. Don't sperg about how that game isn't as good as other. Just have a polite conversation about what she thinks.

If it doesn't work, give up.
