If you just want to indulge yourself in the ashnime universe and kill some time, watch it all up to the ongoing episodes.
If you just want a general impression, watch the movies instead. They're basically extended filler episodes, except for the 5th movie(Heroes), that one is unironically kino since it tries to be something more than the ashnime.
Just check out the "Pokemon Heroes" if you want a quick experience.
If you want to watch the anime for the almost non existent story, watch from the very first episode up ubtil the last episode of XYZ season. Anything after that is pointless and of no substance. Don't watch SM and anything after that if you want "story."
If you want something else, check out the spinoffs, Pokemon Chronicles, Pokemon Generations, Pokemon Origins, Pokemon Twilight Wings, Pokemon Ranger anime, Pokemon Mystery Dungeon anime, Pokemon "specials".
