On one hand I can understand because models are much much easier to work with than sprites are but on the other I really have no fucking clue why they can't do shiny sprites with the menu icons
It'd take a single day tops if you had a handful of people work on it. Hell, fans themselves have done this shit

GF hates their spriters so much that the sprites in SWSH were compressed as jpgs which turned them from the clean 16 colors they were made to have into messes of of 2k colors. Modern GF doesn't care enough to insert the sprites without ruining the pixelart they won't make shinnies.
