Alright I feel I should actually play S/M/US/UM to their completion in order to fully shit on them/enjoy them. Redpill me on which one(s) I should play.

Ultra Sun, it has the most content and is harder than regular Sun. I just like Solgaleo over Lunala so I prefer sun, though I also think some battles in Sun are just made harder.

Definitely Ultra, another important part of the version choice is that Moon has reversed Day/Night, so you would see more of one or the other depending on your version.

How different are the stories between SM and USUM? Are they completely different, or just really minor changes? I'm playing SM right now and may go straight into USUM, but I might burn out if the cutscenes are almost exactly the same.

USUM story is straight up worse than SM. Starts out similar but the 'Ultra' plot points cause the second half to feel a lot less coherent.

USUM's appeal comes from the gameplay and sidequests.
