Bullets are literally just objects that can easily pierce real human skin because of the speed they move at. Pokemon survive much harder attacks on a regular basis; they survive being engulfed in flames, electrocuted, hit by extremely high pressure water, etc. Bullets wouldn't be able to kill a Stage 3 Pokemon.
