Some of the picks of the team make sense like them getting Machamp, Gengar and alakazam which are trade counterparts but why stuff like Tauros and Kangaskhan.

At risk of patternfagging, there is a lot of process of elimination to it.

Blue's Tauros calling back to its being Oak's standout Pokemon in the cut boss battle in RGBY, and no one else uses it.
Kangaskhan is always female and indirectly compliments Snorlax (Red) and Tauros (Blue) as strong no-evolution normal types, and in Let's Go Giovanni doesn't use it so its "free".
Red gets Arcanine because its the best non-Moltres fire type if Charizard is off the table. Clefable because no one else uses it, Victrebel and Ninetales are secondary to their respective Gym Leaders. You might argue Green's multiple poison types are a bit of spice.

The trade evolutions being a trend explains Red's Machamp though, for some reason I never caught that.

Its because the Let's Go rival already has Pidgeot, I'm sure the choice of Aerdactyl was so there wasn't any overlap, since Blue has used Aerdactyl in place of Pidgeot in a few games already.

It is the same set up for everyone:
Grass - Fire - Water - Normal - Trade

Pikachu, Aerodactyl and Clefable are the odds ones out.

Pikachu is a signature pokémon of Red.
Clefable is Green's pokémon in the original mangá.
Aerodactyl is the only unjustified one. I'd go for Pidgeot instead.
