Why do Pokemon need trainers? Can't they just... idk... use their attacks? Connor McGregor doesn't need someone to scream "Jab! Cross!" so why do they?

Trainers offer shelter, food, and protection in exchange for following their orders. They are also more knowledgeable about matchups and how to apply moves than Pokémon are. A Pokémon doesn't need a Trainer in order to fight, but one who has a Trainer is in a better position than one who doesn't.

It should also be noted that in Pokémon Generations, Pokémon can and often do attack without being given specific orders.

Competitive Pokémon is alreaby based on prediction, if Pokémon can use moves without any order or if they already know what their trainer wants from them the competitive battles would have another layer of prediction

This. I’d go a step further and say a lot of Pokémon you encounter on the road are actively looking for trainers to either fight for experience or travel with, knowing that’s a safe and fast way to get stronger. Humans and Pokémon get along great because they share a passion for throwing down

The coaches strategy means fuckall in a boxing match, as well as corner advice. They aren't actively ordered to slip a jab or throw a right hook to the body, they can barely hear the corner most of the time.

I'm pretty sure there were Pokemon in the anime (which, now that I think about it, may not be an accurate reflection of the Pokemon world... you tell me, I guess) that left poor trainers, such as Ash's Snivy. At the same time though there are also those who willingly stay with a bad trainer, like Charizard or Gengar I think...?

The anime is unironically a poor medium to show off Pokemon battling because most battles are just the trainers practically taking turns shouting orders, including "dodge it!!", almost no one capitalizes on weaknesses or uses strategy beyond the "gotcha" moment Ash gets at the climax of battles.
Other mediums show that Pokemon can and will attack without being ordered to do everything, and trainers maximize their potential as a third party in how to apply their moves or what strategy to use.

There are no bathrooms in the pokemon world. There are no human hospitals in the pokemon world. Viruses and bacterias are inocuous or inexistant. You don't need to have a special diet for a pokemon you own because they all eat (if they ever do) the same pellets of whatever magical ingredient is that suppose to be made of. There is no goverment in the Pokemon world. There are policemen but not police station in the pokemon world.

The games show Pokemon with such intelligence to be the exception rather than the rule. Most are probably only as smart as dogs. They can follow basic commands, but can't make tactical decisions on their own.

I feel like other media in general addresses this pretty well. Trainers bring out the hidden talents of a Pokemon, and provide structure and a better life. Also in stuff like Special a battle is very team-oriented as the trainer and the Pokemon work together to win. The Pokemon can attack on their own, and they can improvise but fights are a more natural battle where both parties try to act in each other's best interest. Generations and the anime covers this pretty well too. The games are just a bit more flat about it because it's the main gameplay element. Though it does feel a bit awkward in the 3D titles.

Is canon that Pokemon reach a better potential with the help of humans, some are stronger inthe wild, but some reach new limits with human help, some even evolve by bonding with humans, so there somekind of symbiosis between human and pokemon

In RPG's there isnt typically someone shouting out orders either. The implication in games was never the same in the anime. The only reason the trainers give orders is to fill in transition scenes

I'm pretty sure this is demonstrated by the enemy AI in the games, since wild Pokemon use moves randomly while trained Pokemon have smarter AI and try to use more effective attacks. I'm not certain if that's actually true, though.
