Normal flying cos they didn't wanna make the early route mons too powerful or some bs, or they thought those mons weren't unique enough to not have a normal typing.
Water ice is a natural combination, they are very similar so making a Pokémon with both is easy and simple. Sorta like water ground.
Psychic fairy is for the same reason, similar types that share a lot of similar traits and abilities, fae and tricksters using magic, psychic users are beings using a sort of magic, or at least magical power.

Psychic/Fairy is particularly annoying since we got two lines in a single gen, but otherwise Gardevoir getting that change was cool.

What suprisies me is just how few viable Bug/Grass and Bug/Poison types there are. Barely any since Gen 5.

It's the gen 1 effect where there were three already so we always felt abundance of them

Most Normal Types are just my mom's animals (>>46149333). And every Flying Type that was weird enough to not be Normal Type was a combination of Flying Type and another type.

Farfetch'd and Castform deserved to be Pure Flying though
