Has the anime dealt with Pokemon eating other pokemon like their dex entries suggest? How about ghost types feeding on the souls of humans and a fair number of them being dead people?

Yes. Episode 3 had Ash send out Caterpie against Pidgeotto and having to recall it because Pidgeotto nearly ate it.
BW had an episode about a group of creepy Litwick nearly stealing everyone's souls.

Probably more instances of each too.

No, that's the dex entry from Japanese Blue/English Red and Blue. The anime used the entries from Japanese Red and Green/English Fire Red.
