Just did what I call a Gary Oak run in Let's go Eevee.
Basically it's just using and raising a lot of pokemon and rotating your team. It's fun and helps you avoid overleveling. With candies underleveling is not a problem either.
I used
Eevee, Fearow, Nidoking, Nidoqueen, Beedrill, Raichu, Gyarados, Golem, Venusaur, Charizard, Blastoise, Alakazam, Machamp, Gengar, Dodrio, Starmie, Ninetales, Exeggutor, Magneton, Dragonite.
I'll do the same in Let's go Pikachu with a different roster of Pokémon I have overlooked in the past.
Pikachu, Butterfree, Clefable, Poliwrath, Sandslash, Primeape, Vicreebel (import Belsprout through home), Arcanine, Hypno, Marowak, Dewgong, Parasect and maybe some more.
