There's nothing to say it will just be the original 493. Remember that Alolan forms were made specifically for LGPE to cover type imbalances. Galarian forms will fill a similar role in theoretical LGDP.
There's nothing to say all of the wild battles won't be like Snorlax or the legendaries, where you have to KO the Pokemon before getting the chance to catch it.
