The only middle evos I like more than their final evos that come to mind are:

1. Metang
2. Rhydon
3. Porygon 2
4. Haunter
5. Bagon
6. Frogadier

Most are usually trash.

I like middle evos too, but unfortunately for me my favorite type has so few of them. They're truly a treasure when I get them. Graveler,
Pupitar, Marshtomp, Vibrava, Gabite, Palpitoad, Krokorok, and finally Rhydon and Piloswine - if only by technicality.
