Makes sense why they chose Rowlet and Oshawott since those two are more popular than their evos. Cyndaquil got dragged in because they needed a fire type.

They did this in LGPE too, but only to "important pokemon" that needed it to be expressive in HD, like pikachu, and now Oshawott and likely Dewott.
Also people never complained about Gamefreak reusing the same models (to my knowledge), they just countered people claiming that gamefreak remade all of the models in SwSh as an excuse for why the games were shit.

They did the same thing previously with Pikachu. It's a slighted edited version of the old model. You're wrong, and that's okay. Might be right with the bidoof though, very hard to tell.

It means they care. So many pokémon whose bodies had just draw lines and looked like cheap toys will get actual depth. This was a big problem to me.

I don't have the Bidoof screenshot here, but if you go check it out, the shadow make it seems like their eyes are modeled as well ?
Like there's a small crease where the eyes are instead of just the dot texture
