So how do you guys keep track of EV training in your regular playthroughs? Do you have to keep a physical tally or are there better ways of doing it?

You don't do this for regular playthroughs, and every good romhack has ways to make managing it so easy that you don't have to pay it much thought.

If I'm EV training in earlier gens I use PP to keep count. I.e. when I've used up all my moves OHKOing wild whismur, just add up the total PP of the moves

If it's present it should be noted somewhere on the forum page or readmes, although I think Drayano's a grind-purist/autist and usually doesn't include such QoL.
But then again, drayano's Romhacks are usually piss easy compared to others so you still shouldn't need to EV train, and by the time you might want to the vanilla game would have provided you the EV-controlling berries and methods by then.
