I'm not sure if it makes mixed attackers better, but it does make EV spreads more interesting since you can only max out one.

That wouldn't help anything at all, because more EVs just means that bulky tanks would be insanely overpowered.

Meanwhile, your mixed attackers would STILL BE GIMPED. Dedicated attackers would get to dedicate more of those extra EVs toward bulking up its HP/defenses in addition to attack+speed, whereas the mixed attacker would have to dedicate almost all of it to atk/spa/spe with little leftover for anything else. And the tanks/walls would get to max out HP/def/spd as well as maxing out an attack stat.

The whole EV system should be entirely overhauled. Scale them differently depending on what the base stat is. 252 attack on a Kartana wouldn't give the same raw increase as 252 attack on a Shuckle.

The reason why Mixed attackers cannot work is because you would need to be able to dump EVs in all of Atk, SpA, and Spe, but then you would also be allowing bulkymons to run EVs in Def, SpD, and HP, making them extremely bulky. If you want to see how bad it could get, look at LGPE's candymeta

Technically, you do get diminishing returns on EV's the higher the stat is.
This is only really seen in bulk because that's where the only crossover in function is, but low HP high defenses mons benefit more from HP investment, and high HP low defenses mons benefit more from defense investment.
