Why do people say Gen 6 started the regional gimmicks when Gen 5 had the entire REGION mapped around a gimmick that only exists in these games?

You mean like ever gen after 1? Gen 2 had a second region, gen 3 had underwater exploration, gen 4 had that pokeblock shit

Literally no one says this. The only regional gimmick Kalos had was character customization and it was rightfully retconned in Gen 7.

There's nothing to say that different implementations of the Entralink don't exist in other regions. You could say Sinnoh's equivalent was the GTS building or the underground.
The problem with the actual regional gimmicks like Z-Moves/Dynamax is that they are supposed to tie into the story which also conveniently provides an explanation for why the feature will never return. There's nothing wrong with experimenting with mechanics like the Entralink or PR Videos, the issue comes when they know they're going to drop it from the getgo and still revolve so much of the region's identity around it anyway.
It made Alola and Galar feel so much less special compared to Unova and Kalos which actually made a name for itself with the themes and locales during the story.
