Whitney actually has a unifying theme for her team, a strategy, and a good movepool/stats for that point in the game.

What the fuck is it besides "Normal"? She doesn't even have anything going on outside the farm and being pretty, and I'm pretty sure the former was an anime addition. Her rematch team only expounds on this, its just a hodge-podge of random normal types

Eldegoss just instantly dies to anything that gets supereffective attacks on it, i.e. Early Route Bird. Its powered-up form just needs to be stalled for three turns and it can't do anything.
Miltank takes neutral damage from practically everything in the game save that trade Machop, it has access to recovery and its Rollout can't be consistently stalled out thanks to its typing and increasing base damage.

Wild area Vulpix and Growlithe, grind the rotom rally and raid spots for currency and do the digging brothers for a Fire Stone and buy Fireblast or Flamethrower from a TM vendor.

Sw/Sh has no difficulty curve, the game's difficulty is based on how much pure skinnerboxing you're willing to put up with.

Stone Evolutions in SwSh can instantly be taught all their level up moves for free at the move relearner that's in each Pokemon center. So what were you grinding those fire moves for?

And the fire stone is laying on the ground just past the bridge the hiker NPC suggests not crossing until you have several badges first. Just ignore him and you can get fire stone and water stone early. Grass stone is in Turrfield with the first gym.
