Just started playing LGPE, why did they replace Blue with this piece of shit?
Also can I replace Pikachu or is he necessary for story progression? I don't want to play through the game with that fucking rat

You can take Pikachu out of the team, it just stays on your shoulder for HMs.
They reolaced Blue because he and Red are actually in the game as npcs, they appear later as slightly older versions.

Let’s Go serves as a bridge between Gens 1 & 2. It becomes more clear the more you play

LGPE takes place a short time after the events of RBY/FRLG so it wouldn't make sense for Blue to still be your rival since he already lost to Red. Yes, you don't have to use starter Pikachu at all.

That's probably true. There's a lot of things that make it seem like they want to link gen 1 and 2 but they also have their own things which make it seem like a sepearate universe like other remakes
