You can tell from her dialogue that she tries to be stoic and serious as a trainer to represent Spikemuth, that's why she seems boring, but as you can see in her league card she actually has a guilty pleasure for things like shopping and other girly things. When you beat her for the last time she realizes that she really liked the feeling of the crowd cheering for her, and wants to be able to show her emotions and personality more for people. This is elevates the significance of the scene where she practices smiling in the hotel room. If you think Marnie is a cardboard character you're a dumbass who can only understand characterization if it's spelt out clearly for you.
