My candidates for Gold's team, there are more than six, but you can pick & choose to your liking.

-Typhlosion, starter
-Ampharos, seen to use one in the GOTCHA music video
-Togekiss, evolved from the Togepi in Elm's Egg
-Umbreon, evolved from Bill's Eevee, also a fitting counterpart to Red's Espeon
-Scizor, evolved from a Scyther caught in National Park, he is also shown having one in old Sugimori artwork
-Hitmontop, evolved from Tyrogue given by Karate King
-Red Gyarados, though maybe not, since Blue already uses a Gyarados, specifically when Red chooses Bulbasaur
-Azumarill &/or Donphan make sense, too. Gold has a Marill in HGSS if you play as Lyra, while he also has a Donphan in one of the anime movie intros.

There is Dragonite, from the Dratini given at Dragon's Den, but I personally object. Reason being, Dratini is only given to the protagonist in only one of the three games of Gen II, that being Crystal. The game that Kris first appears in. I think it's only fair that she has the Dragonite, not Gold.

Red - Charizard (i mean of course. He's also the only one with a canon team)

Ethan - Typhlosion

Brendan - Sceptile

Lucas - Torterra

Hilbert - Emboar

Nate - Emboar again Idk it just fits both of them

Calem - Greninja

Eliio - Decidueye

Victor - Cinderace

I'm basing these off of simply how much the fit with the trainers, and other stupid factors like the rival's starters (in Sinnoh if you have Turtwig then Dawn will have Piplup and Barry will have Chimchar. Scorbunny for Victor and Grookey for Hop, etc) that fit for them too

I'd say that since Red created the precedent of having all three starters so that there's no debate over which starter is canon, I'd give all of them all 3 starters as well.
The other 3 I'd give to each of them would be:
Gold/Ethan: Umbreon, red Gyarados, and Hitmontop
Brendan: Castform, Wobbuffet, and Metagross
Lucas: Lucario, Glaceon, and Togekiss
After that I forget their names and I don't care.
But as someone who hasn't played SwSh, I'd give the gen 8 guy Corviknight, Falinks, and Grimmsnarl since those are the ones that stand out to me from that gen.

In all cases the male trainer follows the pattern of having the starter that is strong against the female trainer's starter, and it's easy to tell who the female trainers picked because of stuff like promotional material and the Kotobukiya figurines. Leaf/Squirtle, Lyra/Chikorita, May/Mudkip, Dawn/Turtwig, Hilda/Tepig, Rosa/Snivy, Serena/Fennekin, Selene/Rowlet, and Gloria/Sobble tells us exactly who the male trainers picked as well

Gen I Red has a ton of official art of him with Bulbasaur and Ivysaur. His starter in LGPE is Venusaur. In Generations, he's shown sending out Bulbasaur to fight Pikachu.

FRLG Red (like in Origins) tends to get Charizard though.

In reality, Gold probably chose Chikorita because Typhlosion matches Silver's color scheme. The shit Silver talks constantly suggests Gold wins with less direct strategies/a less power oriented approach to battling that befitts Meganium. This type of innate gentleness is probably why Suicune acknowledges him. Furthermore, it makes certain event encounters like Red Gyarados stand out more, providing him with a much needed power house to offset his starter while serving as another commentary on his gentle nature and innate serenity; he calmed the rampaging red serpent.
