We could've had each island have two contrasting gyms, like Fire and Water, Electric and Flying, Fighting and Psychic, and Dark and Fairy, or any pattern like that. Aether Paradise would've been the perfect spot to have legitimate post game facilities. Like after Rainbow Rocket it becomes some sort of Mt. Battle-esque thing or just incorporates some Battle Frontier facilities. Ultra Beasts could've been battled in the overworld and had their own trials rather than just being caught in Ultra Space and in a couple routes. The kahunas and triak captains could've helped you fight of an Ultra Beast invasion (really they would just tag along and say they'll help but not actually do anything, or they'd be in front of another Ultra Beast implying there's a battle) then you force them back to Ultra Space where you could catch them later.
But they didn't do anything interesting with it. The whole story revolves around Lillie's family drama, and Lillie isn't a particularly likable character either.
The only good use for USUM (and SM) is for genning and transferring Pokémon.
