I SR’d Tornadus in US for a week or 2 before I got bored and quit. Only time I’ve ever done SR method.
Shortest was a growlithe in sun in under 10 sos calls I think (also hatched shiny togepi in about 12 eggs same week)

I was SOS hunting in Photonic Sun (hack of Ultra Sun) and ran into 3 Shiny Deino before running into the Lv 15 Hydreigon I was hunting. That was all within the span of about 24 hours.

As for the longest, pic related, Shiny Mesprit in OR took about a week, can't put my finger on how many actual hours.

Oh and the icing on the cake for that was that the Mesprit was Modest as you can faintly see. I remember perfecting it for use in the battle facilities.

Longest hunt was several months of hunting Virizion in AS and then my file corrupted and I lost it
Shortest was when I found a shiny Magnemite and then the very next encounter was a shiny Koffing in White 2.

About fifty-ish minutes for a Klefki in AS, which also happens to be the only shiny I've ever gone out of my way for.

Technically a shiny charmander I got without really trying, I was just hatching ~20 eggs to unlock the IV judge feature in Ultra Moon and happened to get a shiny in one of them. If you want to count shinies I was actually attempting to get, I pulled a Shiny Ho-Oh in about an hour with RNG abuse.
