For what it's worth, at least the anime cutscenes weren't superdeformed and the game does give an idea that 2D/Overhead Zelda experiences may sell fine on consoles.
Pokémon's experience doesn't lie solely on its gameplay. Seeing a game that tries too much to maintain the overhead view and super deformed look doesn't work as well as 2D because with 2D sprites it's more of an abstraction. 3D has details that may not be as flattering to look at in those proportions, not that they don't have their appeal but players who went through Sun and Moon or Sword and Shield likely expected a more scaled up Sinnoh to experience that they couldn't on the Nintendo DS.
Thing is Link's Awakening's experience would require extra work if they changed the presentation as it could affect gameplay whereas Pokémon's experience doesn't change if the game shifts perspectives. Most of the core player experience is in reading dialogue and turn-based battles, neither of which is compromised or requires rebalancing if the game's presentation is shifted.
