I heard it was easy to become overleveled in this game and that you get rare candies as drops in big bundles. How early does this happen? I kind of want to play it.

Overleveling can be avoided by rotating party members (I know it sounds lame) and exp candies are completely optional.

Not that it matters the game is easy like any other pokemon game before it unless you try and beat the game with a delibird

Yeah your team becomes overleveled quite easily, and you can farm a lot of exp candy with raids.

I'd recommend you to rotate your team constantly. I rotated my whole party after each gym and surprisingly it was pretty challenging. Then near to the end I made a team of the pokemon I liked the most through the whole run and fed them up with candy to patch the level gap. It was pretty fun, but that fucking game has zero replayability kek, so make the most of it on your first (and potentially only) run.

I started avoiding trainers on routes so I wouldn't end up too overlevelled. It's the new exp share always being on that's the problem, it should be toggleable.
Like the other anons said though, rotate your party as much as you want. The routes and wild area are actually pretty varied, enough that you could have a new team for each gym.

Honestly, I'd prefer that to just getting EXP dumped directly on me all the time, I can use it whenever I want on whatever I want. Xenoblade 2 had a similar system in response to people complaining they got overleveled because they did all the sidequests. Raising Pokemon to level 100 is way easier with that than standard EXP methods in an EXP scaling game. It's a shame they're pretty much only from raids, I'd love to get it for catching Pokemon instead of just getting the EXP for that, Go already set the precedent for it, and honestly that's the biggest problem XY introduced as far as I'm concerned.

With the DLC, you can literally capture level 65-70 Pokemon before the first gym. All within an hour of booting up the game.

You start getting rare candies from raids if you fight any on your first visit to the Wild Area, but if you just wait and don't use the candies you'll be fine, or even underleveled by the league.
