By the end of Journeys Ash will officially become the strongest trainer in the world by beating Leon (he still won't be a pokemon master though)

I don't think they'd fully retire him without making him a Pokémon Master. It's been his dream since the start of the series 24 years ago.

Maybe turn him into a strong character who sometimes show up to help the new MC, but not outright removed.

Remember how Numbah One went to space at the end of KND? That's how I imagine the anime ending and given that there's actual evidencie of alien civilizations in the Pokémon world like the time he almost went to space in OS and the invasion in BW it really isn't that far-fetched

IIRC it was a year or so ago, when he decided to join the PWC and beat Leon.
I think Koharu asked him if being a pokémon master meant being the strongest trainer and he said "no, it's much more than that" or something along these lines

But that's exactly what he's saying. The reason he cares so much about getting badges, entering league tournaments, becoming champion, and becoming the number one trainer is because all of those somehow help him towards his dream of becoming a pokémon master.
We don't know exactly HOW because the title of master is purposefully made as vague as possible, but I don't think anyone disputes the fact that leagues and championships help with his goal.

In DP he said that winning a league wasn't enough to be a master
In M20 he said that becoming a champion wasn't enough to be a master
In Journeys he said that becoming the strongest trainer wasn't enough to be a master

It's like the anime is constantly making the title harder to achieve just to prolong his journey

Iris earlier today mentioned something along the lines of being Unova champion wasn't enough to call her a Dragon Master, so she's seeking greater heights and continues to challenge herself.

You can't prolong his journey from a narrative perspective though. Battles are something that need to happen and any battle Ash has after Leon will be pointless because he's already unstoppable.

It's already been shown time and time again that no matter how strong or experienced ash, his pokemom, and Pikachu get that he can just lose to anyone for any reason, forget type matchups, and just be a shitter if the plot demands it. Who can forget Black and White where Pikachu lost by a mile to a Snivy that had literally never been in a trainer battle before

He'll go on a world tour defeating all the leagues he couldn't beat before using all the Pokemon he ever caught, including some that return to him like Greninja, Goodra, Naganadel, and Squirtle. Also, he evolves many of his old Pokemon into their final forms.

Exactly, they'll pull any plot contrivance out of their ass to explain ash being reset again. They don't even bother using a plot contrivance half the time they just nerf him anyway. There is no narrative or consistency its just whatever they want it to be

Like when? Literally the only time Ash was genuinely nerfed was from DP to BW, which had the Zekrom plot contrivance mentioned earlier.
From OS to AG, BW to XY and SM to PM Ash only got better.
From AG to DP you had Pikachu vs. Paul's Elekid ending in a tie, but Paul was an experienced trainer so it wasn't an asspull. And from XY to SM Ash didn't become weaker or less skilled despite what his more childish personality implied.
So I really don't see all those nerfs you mentioned.
