If you're on eJew, or any other buying site, NM is likely just gonna be cards that appear clean. However, never, ever trust a NM description without looking at the card yourself. If the card is nearly flawless, no edgewear, no scratches, it his the highest point of NM you'll see not in person. In person, sometimes on photos you see scratches and thus make the card not Minty, but still NM. Excessive/multuple scratches with no edgewear can still be considered lightly played. but more often they're still NM.
All in all, NM is a good qualification for cards you want to place in a binder. They're great cards to collect, trade, etc. If you want to grade, you need to dig a lot deeper.
