There are Digimon that could translate well in Pokemon's artstyle but also ones that would look incredibly off

It represents holiness
As for stitches, given how Digimon began as a virtual pet the stitches were likely there to emphasize that the Digimon itself has been through many conflicts to reach that point

i like the digi dinos but once you get to megalevel they stop being dinosaurs and become either robots, dragonknights, waifus, or some combination of the three. Tyrannomon and Triceramon are based but simpler bestial designs at mega level like Saberleomon or Plesiomon or even Examon (giant laser lance notwithstanting) are few and far between
