What do you do when you have a lot of pokemon you like and cant' make up your mind on which ones you want on your team?

Make a team with no overlapping types but all are double types so you have 2/3rds of the chart covered

More reason to make a later re-run of the game. I haven't even come close to use everyone I like.
Also, particularly in modern games, you shouldn't limit yourself with 6 mons, you can rotate through a 8-9 roster.
OR was the first time I did it and was great.

The hardest part is if you have a singular type pokemon you kinda feel the need to make as few of it's responding comrades double type
