This stat spread is probably the best that can be accomplished with 600 BST.
I sure do hope this Pokemon is actually good and doesn't have a shitty typing, ability, and movepool to counteract its amazing stats.

Zarude has access to Power Whip which makes up for the 120 Attack.
If anything, I'd say 70 SpA is too low, Chain Chomp shows that you can accomplish things with 80 SpA and high BP moves like Fire Blast and Draco Meteor.
With 70 SpA, it is essentially useless. Zarude even has Jungle Healing so it doesn't fear burns like a normal physical attacker.

steel beam melmetal is a thing. not a good thing, but people sleep on melmetal's special moves
it has discharge, ice beam, and steel beam. 80 spa is definitely useable with moves like that

gyarados has to invest in speed to outspeed certain mons at +1 and doing so limits both bulk and attack meaning it can't OHKO at +1
take gyarados vs tapu koko, adamant with 252 speed evs cannot outspeed koko at +1
without adamant, gyarados can't OHKO with waterfall and rocks
it needs at least 95 speed in the modern meta, and 135 Attack with a stab as weak as waterfall

It's not the spread so much as how cancerous Intimidate is. Defense looks like 79 but in reality it is ~130

120 is fine with a good ability, setup moves, and/or strong STAB.
And having good defenses isn't a bad thing. Minmax isn't always the best.
