The castle appearing was kind of a fantasy thing going, like a lot of Pokémon stuff. But here's the answer Game Freak gave:
"According to a Team Plasma Grunt found here, the castle was being secretly built for several years..."
N changes his mind because he saw the bond the protagonist had with their Pokémon (like a lot of things in the Pokémon universe, things are sometimes resolved or better understood through Pokémon battles), and also discovered Ghetsis had ulterior motives.
It's curious you mention N changing his mind, because it's one of the best parts of the game's story. That battle would show which side (truth or ideals) would be correct, and N realizes he is wrong.
As for the Team Plasma question, the ultimate Ghetsis plan was to be the only one with the "power" of Pokémon. So the original Team Plasma stole from the trainers who were not convinced. I mean, that's Game Freak's answer for it. For Pokémon story levels, sounds ok. Better than the castle one, which is lame I admit
