Say what you will about USUM, but the Totem Battles are some of the hardest battles in the series. And it's really sad to see them revert to the single battle, no thought, monotype gym format.

Really shitty bait. Just compare SM Kommo-o and USUM Kommo-o. More coverage, better partners, and better thought out strategy in USUM.
The SM electric trial Vikavolt didn't even have special attacks when its partner powers up special attacks

I thought the boss fights were pretty fun. Being outnumbered and against an opponent with higher stats than you was different than usual for Pokemon but it was a nice change.

Any reasons as to why a wild Pokémon would know any moves that it could only learn from TM and the Move Tutor in USUM?

Totem Kommo-o knows Drain Punch, Poison Jab, Thunder Punch, and some other move I can't think of, and the three I listed are not naturally learned moves for Kommo-o.

TM and Move Tutor moves are moves that are, well, TUTORED. A mon needing a TM/Move Tutor to learn a move doesn't mean it's unable to learn it naturally, it just means they need specific training and skill to pull it off.
And considering how powerful Totem Pokemon are, they definitely have enough power and skill to learn a move they need to make them more powerful.

In the game at least one of the trial captains mentions having trained the totem pokemon, so they’re not completely wild and definitely could have been given a TM.

Legends is the perfect time to bring back something like Totems since Sinnoh is a wild region during the time the game is set in. Since gym leaders and the elite four aren't in Legends, then we should definitely have some boss fights with Pokemon to make up for that.
