Just like Magcargo isn't twice as hot as the surface of the sun, Fire types aren't magically immune to all heat.

But you're definitely right, diamonds are cut with other diamonds. Today they're just tools covered in diamonds. But the diamonds used on the tools are likely synthetic because in a matter of weeks diamonds more perfect than in nature can be formed.

They're seen that way because they measure 10 on a scale that was literally made to measure how hard other gems are compared to diamonds. Enough pressure can absolutely damage a diamond. That includes water if you can get the pressure high enough and have the machine stable enough that you can properly cut with it.
