It doesn't make much sense unless you consider her doing it because she received a vision of this path (explained by her commentary on her precognition) or her bonds with her Pokemon (she considers love important enough to be a psychic power in it's own right in gen 2/4, and specifically talks about training to be worthy of standing alongside her Pokemon in Masters).

While I'm not saying it was their intent with Sabrina at first, they've been dropping hints that she's not just a stand-offish loner psychic since Gen 2. Again, I brought up Masters as it specifically goes out of it's way to reinforce this. She's basically Sabrina as she "first" appeared, but interaction with her has her bring up how she thought the player would make a good friend, how she'd like to do "normal things" like shopping together, and recontextualizes her training as a way to better herself and develop deeper bonds with her psychic Pokemon. It even has a part that is addresses why the fuck she would consider something as showy and out there as Pokestudios by having her interact with Elesa and Fantina, two actual celebrities outside of battling.
