Im currently shiny hunting a full set of eeveelutions in the following balls. I have an existing shiny set, but i dont like them because theyre only in premier balls.

Vaporeon - Net ball
Jolteon - Fast ball
Flareon - Repeat ball (i dont love this one but theres no better option)
Espeon - Dream ball
Umbreon - Moon ball
Leafon - Nest ball
Glaceon - Dive ball
Sylveon - Love ball

I try to do this with every single Pokemon I catch that I'm planning on using, glad to see I'm not alone
There should be a system in place to swap Pokeballs on already captured mons, or at the very least give you a choice for your starter and hatched eggs

It's still too limited. The ball shouldn't materialize out of nowhere when the egg hatches, there should be a prompt to select one from your bag

For shinies, I feel like the Premier Balls work better. The balls you listed would be good for the normal forms though.

I keep vacillating between wanting to match each mon to their ball and wanting to put everything in Premier or Master Balls. About to start a Ribbon Master in FRLG so I'm probably going to do the latter.

One of my favorite intentional combinations was Dusk Lycanrock with a Timer Ball when I caught one in SwSh. The colors work well and the clocks match the gimmick.

no this is what i want. the balltism for me isnt necessarily always aesthetic, its more to do with the vibe of the pokemon, which for eeveelutions is more to do with their regular designs.

all my other shinies are in premier balls because they are special/rare, for example.

Another worth mentioning: Shiny Latias in a Parkball. Maybe one day they'll let it be possible, but for now Quick Ball is the best I can manage.
