So why is it ok to call Sinnoh's Gym battles hard but whenever you bring up a Johto Gym Leader like Whitney or Clair it's always "UMM, ACKSHUALLY, IT WASN'T HARD, YOU WERE JUST STUPID BACK THEN".

IDK. /vp/'s dumb. I still think Whitney is hard unless you specifically prepare for her and I'm sure even then she'll give you a run for your money. I will say, however, Geodude is a really, really, really good Pokemon for GSC, so much so that it trivializes the first three Gyms and still creams the fourth with Magnitude because Levitate isn't a thing.

I'm not sure if there's a mon like that in later generations.

Also fwiw, that story in the OP literally just happened today, it's not something I made up as a strawman.

Nah, Sinnoh's Gyms being challenging / the game being more challenging than Pokemon games in general isn't up for contest. If that anon were asking which was harder I'd say Sinnoh in a heartbeat. But he's asking why the more challenging Gyms of Johto still get shit on, which is fair.

Still, most of the Johto gyms are not good.
