Essentially, for a game to work with a Twitch Plays framework, it needs to follow these rules:
1. No precision or analog controls (like stick position, motion controls, and so on). I guess it could be fudged if the game never needs anything beyond the four cardinal directions.
2. "Tick"/turn based. Other games, like Street Fighter or Dark Souls, will require timing, which can be basically impossible to coordinate.
3. No need to hold inputs. Many platformers require you to hold a direction to actually move and jump. Inputs are only going to be active for a single frame, which needs to be considered. This also requires any game to be grid based, as otherwise the character would just spin in place.
Optional: Victory must be inevitable, there should be no actual "lose" condition. And it would ideally be from a popular franchise to attract initial attention.
These rules make entire genres of games unsuitable, like fighting, action, platformer, and RTS games. It seems like JRPGs are the only really suitable games for such an experiment.
The only non-JRPG I can think of would be exactly Stardew Valley, but even then the fishing minigame would be a bitch to implement.
Classical roguelikes, Nethack, TOME, Crawl, would be the next best type, but the lack of inevitable victory would surely turn people off.
