Real-time combat where you pick a move and you control your pokemon to try and hit the enemy with the move you chose.
You get like 3-5 seconds and are put in a small platform or field where both sides try to dodge/defend the given move.
The pokemon's speed stat determines how fast you can move it, the accuracy of the move determines how big its hitbox is.
Stat-boosting and self-healing moves allow the enemy to make a standard attack, something like the A button in PMD.

play pvp, doesn't matter what format. Battle Spot, one of Smogon's tiers, Anything Goes, all of which will offer some more depth beyond just OHKOing everything, with things like predicting switches, use of hazards etc.

i agree that competitive pokemon is mostly the most strategic way to play, but I do think there is a lot of value in good singleplayer gameplay, and somethings you can do singleplayer that you can't do in multiplayer. Especially since multiplayer generally restricts you to min-max bullshit.

In that case, one of the biggest things for most of the game is the fact the AI for the most part gets no access to EVs and has 0 IVs in all stats apart from important trainers like gym leaders which have 31. If you had trainers slowly gain EVs in their Pokemon at the same rate a player's team will on average that would make it a fair bit more challenging. Also playing the game on Set as opposed to Switch helps make the game more challenging too.

It's inherently impossible so long as the most you can do to make current-gen battles complicated is 2v2, and that's STILL not as complex as even most SNES RPGs, especially when they can't figure out how to make good boss fights.
