Keckleon for Hoenn, Furfrou for Kilos. Komala for Alola, gen 8's fossils, a lot of single-stage mons have exclusive abilities or moves starting in gen 6.

There are several levels of "Gimmick" in my view. We've got:

Visual Form Gimmicks like Alcremie, Furfrou, Spinda etc that are meant to encourage collection autism.

High Level Gameplay Gimmicks like Shedinja or Wobbufet where the Pokemon outright works different gameplay wise than the rest of the game, whether due to abilities or weird hyper-limited movesets.

Low level Gameplay Gimmicks like Archeops or Slowking where the Pokemon still generally follows the same rules as other pokemon, it just has an ability or such that adds a higher level of active interaction than say, Pressure or Tinted Lens.

Different Pokemon with the Same name gimmicks like Meowstick and Lycanrock, where it's a branched evolution but because GameFreak is terrified of reaching #1000 in the Pokedex they call them formes.

"Actual Formes" like Oricorio, Castform, or Giratina who can use conditions to shift around movesets and typings and stats.

Lopsided stats like Shuckle where he technically plays like a normal pokemon but has stats so lopsided it encourages gimmicky builds.

And of course a Pokemon can be in two of these categories. Unown is both a Visual Gimmick and a High Level Gameplay gimmick.
