This makes no sense. How could Apricorn trees survive long enough without being able to be consumed by Pokémon and their seeds spread by them?

The apricorn is likely a large seedy fruit that only a select few species of Pokemon can eat. Kind of like the Avacado. They evolved for megafauna to eat, but after said fauna went extinct humans took over in cultivating them.
