But yeah, water mons to consider could be old reliable Quagsire or Gyarados, but if you're trying out pokemon you haven't given much attention to before, maybe you could try out Lanturn (Fish with a good rod back in New Bark Town), Mantine (Heart Gold only, route 41 surfing), Politoed (surf in Violet city or ecruteak, poliwag are all over the place) Octillery (Route 44 fish with a good rod) or Azumarill (really rare encounter in Mt. Mortar), or even Slowking (Slowpoke Well encounter) or Kingdra (Whirl Islands fish with a good rod) if you don't mind trade evolutions. I think Lanturn is kind of nice in that it also provides an electric type so you don't have to choose between magneton or ampharos, which you've probably already done before, but Mantine could also provide a flying mon if you need one of those.
Speaking of a fly mon, you could always go for crobat or fearow, both of which are solid flying type mons, but I think Murkrow/Honchkrow or Xatu would be a little more unorthodox, You can get Murkrow in the safari zone in the swamp region, and Xatu is in the hidden section of the ruins of alph accessible by surfing in Union Cave's basement. both of these are cool pokemon to add to your party in their own right, providing you with a dark or psychic type respectively as an added bonus.
Other suggestions would be Mismagius (Cliff cave at night or Safari zone forest area) as a nice ghost type special attacker since your team could use another one of those, Tangrowth (route 44 grass) for a different approach to deal with the plethora of water types you'll be facing, and Weavile (ice path at night) or Mamoswine (Ice path) for a good ice type to deal with Lance's dragons
