This has been a fan favourite for a while, pushed especially for the original Dragon and shit like Proygon with Tri attack.
There are already abilities that sort of simulate the benefits of three types so it's not out of the question one day

Mechanically this is already possible with Trick-or-Treat and Forest's Curse. Keeping it exclusive rather than making it a feature would make the idea work, as it has been done with fusion.

You say that as if being monotype is a bad thing. Being monotype Flying for instance is far more effective than being Flying Normal, and being pure Steel is often better than being Steel Ground or Steel Rock.

Don't just think about having dual stab and more resistances, also thini thibk about the absence of weaknesses as well.

Okay but those are flaws with the specific typing, it doesn't change the fact that given the same resistances monotype has an inherent disadvantage in having less STAB. There are as many good strong combinations as weak ones so I don't know why you think the occasional shitty double weakness means it's not generally an advantage to be dual typed.
And normal is plenty good as a dual type, stab facade or boomburst isn't anything to smirk at.

I think it'd be really difficult to make work properly but a ton of pokemon can already have like, an informed third type.

Double STAB is way too strong, a 50% increase would be better, same as Adaptablity. Even then it might be too big a buff - things like a Conkeldurr Close Combat would be able to OHKO Corviknight.

As much as i hate to say it, third type would be great base for another Super Saiyan Transformation - Pokemon would get small stats boost and third type.

There's so many dual-typed that are arguably better than monotype by just about every metric. Grass is buffed with poison, rock, and holy hell fire if that ever happens. Dark and poison are great together. Shit, electric and flying is quite the improvement over pure electric.
