There's the Pokemon Center line that are your traditional mons about 8 to 15 inches big that cost around $35 each.
The current big thing TPC is selling is the Sitting Cuties (Pokemon Fit in Japan) line that's giving every single Pokemon a plush as it comes, currently through gen 3 and gen 4 is on the way by February of next year.
There's the PokeDolls line which is quite similar to the sitting cuties line, but a little bit higher quality and mostly for a handful of mons regions that haven't had sitting cuties yet. (Pic related was recently released to the US Center)
Every month there seems to be a new set announced, a lot of the time some special theming, that usually stays restricted to Japan so you'd have to import.
I'd recommend looking at the Pokeshopper Rotom Plush Dex when it's online again to see some ideas of the merch released for every mon. A handful of mons out there still haven't received official plushes yet like Silvally so best of luck hunting em down.
Trying to collect them all is a nightmare both financially and mentally, so I'd recommend to look for your absolute favorite first before anything else and consider if you want more from there.
