I encountered 2 shiny Pokemon really close to each other around a year ago when I wasn't even hunting. I was grinding for the E4 at the time and I somehow got lucky enough to find a shiny Rufflet, just a few more encounters later and I find a shiny Bouffalant. They're still in that game too, really happy to have the shiny form of my favorite Birdmon.

I caught a shiny Pelipper in SM from the grass patch outside of the Battle Tree and named it 2NukeNotEnough. I wondertraded it and got banned like 48 hours later

First 2 shinies were random encounters during the story, a medicham in pearl's victory road and a 5% Beedrill in soulsilver's bug catching contest when i was trying to get a sun stone. Lost both games that had them though so i had to reclaim them.

Hacked the Oak's Letter event into my Platinum cart because I really wanted a Shaymin. Caught the first one and it wasn't Timid so I SR'd. Next one was not only Timid but fucking shiny too. Only time I've ever really freaked the fuck out over a shiny.

I cannot remember if i got random in Emerald.
In Plat i got Marill (no chaining)
XY cant remember
In Moon got a Feebas but i was looking for HA Magikarp and broke the chain

random Machop - Peal in the foggy area - named it Hulk, turned it into a Machamp and gave it a dynamax soup in shield. it's super based now. sadly, i caught it in a quickball, because back then i didn't think it was important to put shinies into special balls.
random Gravler - Pearl in the victory road (or whatever the equivalent was called) - named it DwayneRock, turned it into a Golem and now it's sitting in pokemon home because i can't put it into shield. i caught it in a master ball, because i didn't want to risk it just self-destructing.

I know it isn't an actual random encounter in the fierce definition of the word random encounter, but it's a cool story. I also got a Gen III shiny Sneasel in ~1700 REs and 2 RE shinies before the Pewter City in a copy of FireRed.

I literally used the pokéradar once and ran into it. Wasn't even hunting, just dicking around in Pearl. When I saw it sliding into battle I couldn't believe it.

Got an Onix in Crystal while training in Victory Road. Heard the stars and was like YO

Found a shiny Weedle in a sped up rom of Fire Red once but I don't count it

Once when I was playing HG I needed to catch trade fodder so that I could sent over stuff from platinum. I decided to hit two birds with one stone; I dropped off some pokemon at the daycare by cerulean and then just ran around in the grass to catch shit and ran into a shiny gloom
