There's a lot of dialogue that's used to railroad you along through the story. This makes the game fairly linear to a point. Once you get through story bits though, you definitely can explore and backtrack to get a good deal of new pokemon/ items/ sidequests.
Battle wise, I think that the games themselves have some of the best fights out of the mainline games. Especially the ultra versions.
>How's the post game?SM has a few extra routes that lead up to the battle tree and a postgame legendary hunt. The elite four rematches have a random final fight to incentivize redoing that, and a couple of side quests unlock around the region.
USUM is the same, but with a villain base via Rainbow Rocket instead of a legendary hunt. There's also more sidequests.

There's a slightly different stories, trainers have improved teams, some new areas were added, there are extra pokemon in the regional dex, the location based evolutions were changed to be earlier in the game, there's a lot more sidequests, and there are some nice in game move tutors attached to the mantine surf minigame.
