The point of doing it then was that Rose wanted to be sure it would work. He knew he needed a string champion to help in his plan and wasn't sure how long Leon would be around, or if his replacement would be willing to go through with it. Why wait 1000 years when the conditions are perfect and could change any day?

When I dream of a different story where Eternatus is instead a massive fossil that is having to be fed wishing stars to reanimate it and Rose battles us to stall for time and afterwards is this epic cutscence of the fossil glowing red and bursting back to life before Eternatus bursts through the ceiling. But that would have required GF to actually animate something and maybe would be too much like Groudon/Kyogre awakening.

I always believed that Rose was a glory hound and wanted to be seen saving Galar. What better time to broadcast your big moment than when a huge crowd is gathered with giant television screens around them? If memory serves, Rose kind of brags a lot about stuff his company does, so to me it makes sense that he'd milk saving Galar or broadcast it for bragging rights.
