I'm pretty sure everyone would prefer that, actually.
BoTW came out in 2017 and the sequel is set for release sometime next year (likely Q3/4). That's 5 years between games. 5 years after Sun/Moon's release, Pokemon had ultra Sun/Moon, LGPE, and SwSh. The disparity there is evident. Zelda gets way more development time, even though Zelda games have vastly less content and replay-ability than Pokemon games. If Zelda fans can wait then so can we.
I don't think the fans would mind waiting, though. It's just that GF knows they can put out sequel after sequel with minimal effort and development between and continue to print money. You can say the same thing about Zelda, but there at least seems to be an internal standard the developers hold themselves to. If the Pokemon devs don't have standards, or that same sense of pride or care about the quality of their work, and since the fans eat the series up no matter what, then where's the incentive for growth and progress? There is none.
