They're in the data but unless they were added to the grand underground then there's no way to get them because this is a DP remake and they were't in DP.

Zero because it's a DP remake with DP encounter tables.

and yet there were no wild encounters in the underground before
what interests me is whether we'll be able to get Houndour or Eevee somewhat early at least

Grand underground feels more like a way for ILCA to cover their asses since there's no transferring until next year so they stuffed the rest of the dex below ground on a single map instead of actually making new areas and content for them.

They wanted to give us a 1:1 remake so that means we get the shitty 2007 limitations of the original except wherever they felt like fucking with it e.g. mandatory exp share.

It looks like you can access the Fire Cave in the Underground as soon as you reach Eterna City, this guy got an early Houndoom before even fighting Gardenia:

Seems like it's all Platinum Dex mons down there with a few others but no National Dex mons.
